Employed Molybdenum Vanadium Steel

Employed molybdenum vanadium steel that is used a scalpel. The sharpness is still the same as the other soba cutters made of iron-based materials and it also has easiness of care because of its corrosion resistance. Because it has more abrasion resistance and fracture toughness, it is good not only for professionals but for beginners.

Prepared for 2 Types of Handles Depending on the Use

We were careful in designing handles as well. On 240mm, which is most frequency used at home and workplace, we prepared 2 types of handles. One is a black plywood that has more durability and another is an oak wood that has good appearance and more operability.
Because there are 3 rivets for black plywood handle, it can hold out to cruel use. The oval-shaped oak wood handle offers comfortable grip and operability to beginners. Also the winded rattan string will reduce a risk of unexpected slippery.

Artistic Edging with Heart and Soul

Sticking to sharpness, the edge satisfies even professionals. We have more than 5 manufacturing process for edging on this series and are willing to spend a lot of time. Usually, durability is required for business-use, however, “Tojiro” have been pursuing the sharpness and studying edging and structure of a blade for a long time. This is one of a reason that many professionals use “Tojiro” as their favorite knife all over the world.

“Easy care”, Stainless Steel Soba Cutter Series

This is a new soba cutter series of new generation using molybdenum vanadium stainless steel that has corrosion resistance. The sharpness we learned from high carbon steel soba cutters is still the same. This series can be used from professionals to beginners and offers comfortable feeling with satisfactory.
High carbon steel, Shirogami soba cutters and black finished soba cutters are also available.
