We could have opportunities to learn elements required for knives from top chefs through one of our biggest partners, FFCC (French Food Culture Center). We discussed about an ideal shape and performance with top chefs many times and also studied their grips. Then we could realize their requirement faithfully in developing process. The handle and blade provide easy control and comfortable grip. An arranged tornado pattern on the handle, which is a symbol of "Tojiro-Pro" expresses its specialty. Also special shape of the bolster never disturbs various ways of grip and the refined outline curve is a proof of good control. Rounded heel is for a special use of western people.
We choose Nickel Damascus Steel for as a material for blade, which had always fascinated European top chefs. We could not find any reasons not to take this. Damascus --- treasured in European royal family. It was made in capital city of Syria, Damascus region, in the old time but unfortunately the manufacturing method has not been handed down. It is said that stainless steel was even made in the process of studies for making Damascus steel. The word "Damascus" is now, used as a generic name of multi-ply steel. This multi layered structure make carbon in core closer and that result in stable hardness and sharpness.
Top chefs say "Sharpness is essential" all together and normal sharpness is never good enough for them. It must be extremely sharp. We pursued the sharpness and could achieve an ultimate blade structure, which is just for experts who want inexperienced sharpness.
Because it is very sharp, once you use by incorrect way, the edge will get chipped easily. The edge is such a delicate. The special edging is done by full-time workmen one by one putting their whole heart and soul. Enjoy the special tune-up have been wanted by top chefs.
