シャラクモノの特徴的なハンドル

Designed by "Komin Yamada", one of the most famous designers of kitchen knives. It is designed with all his might and the form represents its usability. The impressive black-square patterns are employed, which reminds you of Japanese sword image with a keen edge. They represent urban windows in a city as well. That means a fusion of Japanese tradition and modernity. These squares are painted by hand in a final process and symbolize this series as the identity.
Blade is integrated with handle, which is very simple and modern design. Also the special shape that becomes gradually thicker from bolster to heel, makes your grip more comfortable. We also expanded the varieties into 21 items in 2009. You can choose most suitable size or kind you like from the broad lineup.

Not only the design but we never compromise with fundamental functions in kitchen knives. Sticking to sharpness, we employed special steel as material that is based on molybdenum vanadium steel ,usually used for scalpels, and added several elements for more corrosion resistance and sharpness.
Slanting scratch finish is done on the blade's surface for more beautiful looking and the degree matches to connecting part between the handle and the blade. Also hieroglyphic icon on each blade will tell you what should the knife be used for bread, fish, vegetable and meat.

Artistic Edging with Heart and Soul

Sticking to sharpness, the edge satisfies even professionals. We have more than 5 manufacturing process for edging on this series and are willing to spend a lot of time. Usually, durability is required for business-use, however, "Tojiro" have been pursuing the sharpness and studying edging and structure of a blade for a long time. This is one of a reason that many professionals use "Tojiro" as their favorite knife all over the world.
